  17. Chopped Cilantro (Masino Pareko Dhaniya – मसिनो पारेको धनिया): 3 tablespoons

I am going to use this deep bowl to mix these ingredients one-by-one.

Let’s start by adding mix of soaked green peas and brown chickpeas. Chopped baked potato, cilantro, Once you mix tomato and onion, Chatpate should be served right away after stir mix.  Otherwise it will become soggy. Next, puffed rice, Wai Wai noodle, roasted grams, peanut, cumin and coriander powder, red pepper powder, crushed sichuan pepper, mustard oil and at last, salt.  Going to pour seasoning from WaiWai noodle for extra flavor.  This is optional.  Let’s squeeze lemon on top.  Stir mix.

Again, don’t wait too long to serve.  I can smell the strong aroma from sichuan pepper, green chili and coriander powder, and it’s so delicious.

Let me taste a bit. It’s so good! All ingredients are just right.  It reminds me of those days when I use to run across the street from my high school to buy Chatpate from a street vendor, and share this sour and spicy snack with my best friends!

You can serve in a bowl.  But I am going to use a cone made from paper, just the way street vendors from Kathmandu do it. You can eat with fingers, spoon or use a sturdy paper like this.

Please try this recipe and let us know how it went.
